Blueberry Peanut Butter Overnight Oats

You can’t expect a car to run on an empty tank of gas, can you? Even if you don’t feel like a “breakfast person” right now, you can train your body to become one. This blueberry peanut butter overnight oats recipe from our meal planning app is great for having a balanced breakfast while on a tight schedule. You can make it the night before, so that all you need to do is grab it from the fridge in the morning.

Ingredients:

  • 1 cup rolled oats
  • 1 cup light coconut milk
  • 1 tbsp honey
  • 1/2 tbsp chia seeds
  • 1/2 tsp cinnamon
  • 1/4 cup granola
  • 2 tsp peanut butter
  • 1/2 cup blueberries

Instructions:

  1. In an airtight container, combine oats, milk, honey, chia seeds, and cinnamon. Cover and refrigerate at least 4 hours or overnight.
  2. Add to bowls and top with granola, peanut butter, and blueberries.

Makes 2 servings. Enjoy!
