Healthy Shrimp Tacos with Guacamole

Some of our favorite foods are staples in traditional Mexican cuisine. This healthy shrimp tacos recipe is just one example.

Ingredients

  • 4 corn tortillas
  • 4 tsp olive oil
  • 8oz shrimp, cooked
  • 1 cup cabbage, shredded
  • 1/2 cup pico de gallo
  • 1/3 cup guacamole

Instructions

  1. Heat oil in a skillet over medium heat. Add shrimp and sauté for 3 minutes until warm.
  2. Heat a clean skillet over medium heat and plate tortilla in the pan. Cook until browned for 30-60 seconds then flip and repeat.
  3. Assemble tacos by layer tortilla with cabbage, shrimp, Pico de gallo, and guacamole.
  4. Enjoy!
