¡Feliz Cinco de Mayo! 🌺🎉
Some of our favorite foods are staples in traditional Mexican cuisine. Rich in legumes, meats, seafood, corn, rice, and a wide variety of fresh fruits and vegetables, Mexican cuisine has something for everyone. Flavors of chiles, onions, cilantro, cinnamon, cumin, and cocoa are often found in many traditional Mexican dishes, too.
To celebrate Cinco de Mayo, we’re sharing our favorite Healthy Shrimp Tacos recipe.
Ingredients
- 4 corn tortillas
- 4 tsp olive oil
- 8oz shrimp, cooked
- 1 cup cabbage, shredded
- 1/2 cup pico de gallo
- 1/3 cup guacamole

Instructions
- Heat oil in a skillet over medium heat. Add shrimp and sauté for 3 minutes until warm.
- Heat a clean skillet over medium heat and plate tortilla in the pan. Cook until browned for 30-60 seconds then flip and repeat.
- Assemble tacos by layer tortilla with cabbage, shrimp, Pico de gallo, and guacamole.
- Enjoy!
