- 1/2 cup pumpkin puree
- 1 1/3 cup all-purpose flour
- 2 tsp pumpkin spice
- 2 Tbsp pure maple syrup
- 1/2 tsp salt
- 2 tsp baking powder
- 1 egg
- 1 1/3 cup milk
- 2 Tbsp avocado oil
- Combine pancake materials together until well combined.
- Heat a pan lightly greased over medium heat. Add batter to cook, allowing bubbles to form. Check if bottom is golden brown and flip to cook other side. Repeat with remaining batter.
- Serve with yogurt, maple syrup, and pumpkin seeds.
