Pumpkin Pie Pancakes

Fall is here, and so is that classic pumpkin spice! Have a cozy morning with these Pumpkin Pie Pancakes. Serve with yogurt, fruit, and pumpkin seeds to make it a balanced meal.


  • 1/2 cup pumpkin puree
  • 1 1/3 cup all-purpose flour
  • 2 tsp pumpkin spice
  • 2 Tbsp pure maple syrup
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 egg
  • 1 1/3 cup milk
  • 2 Tbsp avocado oil


  1. Combine pancake materials together until well combined.
  2. Heat a pan lightly greased over medium heat. Add batter to cook, allowing bubbles to form. Check if bottom is golden brown and flip to cook other side. Repeat with remaining batter.
  3. Serve with yogurt, maple syrup, and pumpkin seeds.
