Healthy Light Sesame Noodles: Classic & Flavorful Asian Alternative

A flavor-fully light alternative to a classic Asian dish – Healthy light sesame noodles!


Ingredients

    • 1 head broccoli, cut into florets, stalks peeled and thinly sliced
    • 2 red bell peppers, thinly sliced
    • 1 large onion, halved and thinly sliced
    • 2 garlic cloves, minced
    • 12 ounces whole-wheat spaghetti
    • 3 tablespoons creamy peanut butter
    • 1 tablespoon dark brown sugar
    • 2 tablespoons rice vinegar
    • 2 tablespoons soy sauce
    • 1 tablespoon toasted sesame oil
    • 1/2 to 1 teaspoon red pepper flakes

Directions

Prep:
1. Chop/slice: broccoli, bell peppers, and onion.
2. Mince garlic.
Make:
1. In a pot of boiling salted water, cook spaghetti for 5 minutes.
2. Add broccoli, bell peppers, and onion; cook until pasta is al dente and vegetables are tender, about 3 minutes more.
3. Reserve 1/2 cup pasta water; drain pasta and vegetables.
4. In a bowl, whisk together peanut butter, sugar, vinegar, soy sauce, oil, garlic, and red pepper flakes.
5. Add hot pasta and vegetables; toss to coat, thinning sauce with a little pasta water, if necessary. Serve: at room temperature or chilled.
