Healthy Light Sesame Noodles: Classic & Flavorful Asian Alternative

A flavor-fully light alternative to a classic Asian dish – Healthy light sesame noodles!

Ingredients

Sauce

  • 2 tablespoons sesame oil
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 3 tablespoons tahini
  • 2 tablespoons smooth peanut butter
  • 1 tablespoon honey
  • 1 tablespoon ginger peeled and grated
  • 1 tablespoon garlic minced
  • 2 teaspoons chili paste
  • 2 tablespoons warm water

Noodles

  • 1 pound fresh Chinese egg noodles

Garnish

  • 1 cucumber julienned
  • 2 cups carrots julienned
  • 1 cup radish sliced
  • 2 green onions, green parts only chopped
  • 1/4 cup roasted peanuts crushed

Directions

  1. Whisk together all sauce ingredients minus water in a medium bowl.
  2. Add water, 1 tablespoon at a time until the sauce reaches the consistency you like. Set aside
  3. Bring a large pot of water to a boil.
  4. Cook the noodles according to hte package directions until al dente. They should retain a hint of chewiness.
  5. Drain, rinse with cold water, drain again and set aside in a bowl.
  6. Pour sauce over the noodles and toss until evenly coated. Portion to serving bowls.
  7. Garnish with cucumber, carrot, radishes, green onions and peanuts.
