A flavor-fully light alternative to a classic Asian dish – Healthy light sesame noodles!
Ingredients
Sauce
- 2 tablespoons sesame oil
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 3 tablespoons tahini
- 2 tablespoons smooth peanut butter
- 1 tablespoon honey
- 1 tablespoon ginger peeled and grated
- 1 tablespoon garlic minced
- 2 teaspoons chili paste
- 2 tablespoons warm water
Noodles
- 1 pound fresh Chinese egg noodles
Garnish
- 1 cucumber julienned
- 2 cups carrots julienned
- 1 cup radish sliced
- 2 green onions, green parts only chopped
- 1/4 cup roasted peanuts crushed
Directions
- Whisk together all sauce ingredients minus water in a medium bowl.
- Add water, 1 tablespoon at a time until the sauce reaches the consistency you like. Set aside
- Bring a large pot of water to a boil.
- Cook the noodles according to hte package directions until al dente. They should retain a hint of chewiness.
- Drain, rinse with cold water, drain again and set aside in a bowl.
- Pour sauce over the noodles and toss until evenly coated. Portion to serving bowls.
- Garnish with cucumber, carrot, radishes, green onions and peanuts.
