Ingredients:
- 3 cans (5 oz.) tuna, drained
- 6 T mayonnaise
- 6 T celery, chopped
- 3 green onions, chopped
- 1.5 tsp paprika
- 3 dashes pepper
- 3 sweet potatoes
- 3 tsp olive oil
- 6 cups spinach
Directions:
- Preheat oven to 400 F. Line a baking tray with foil.
- Prick the potato with a fork all over. Bake the potato for 60 minutes, turning halfway through the process.
- Let the potato cool for 5 minutes. Cut the top of the sweet potato and squeeze open the sides. Mash a bit of the insides of the potato with olive oil.
- Mix the tuna, mayonnaise, celery, green onion, and paprika. Stuff the sweet potato with tuna mixture.
- Serve with chopped spinach on the side.
