These ๐๐ซ๐๐๐ค ๐๐ก๐ข๐๐ค๐๐ง ๐๐ฎ๐ซ๐ ๐๐ซ๐ฌ are full of veggies, fresh herbs, and of course, that staple of Greek cuisine: feta cheese! If you are looking to cut calories, saturated fat and cholesterol, ground chicken is a great substitute for ground beef. Our version even includes a recipe for healthy, homemade tzatziki sauce. Cook these on the stovetop or toss them on the grill, then serve on a bed of lettuce or on your favorite burger bun.
Ingredients:
Chicken Burgers:
- 2 ounces feta cheese
- 1 egg
- 1/4 cup red onion, minced
- 1 cup spinach, chopped
- 10 kalamata olives, pitted and chopped
- 1 Tablespoon cornstarch
- 1 Tablespoon fresh dill, chopped
- 1 teaspoon dried oregano
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Tzatziki Sauce
- 1 small cucumber
- 1/2 Tablespoon fresh mint, chopped
- 1 Tablespoon fresh dill, chopped
- 1/2 Tablespoon lemon juice
- 1 clove garlic, minced
- 1 cup low fat plain Greek yogurt
Instructions:
- Thinly slice half the cucumber and set aside for serving on the burger. Finely chop the remaining cucumber and place in a small bowl. Add the rest of the sauce ingredients and mix until well combined. Store in the fridge until ready to use.
- In a large bowl, combine feta, egg, onions, spinach, olives, cornstarch, dill, oregano, garlic, salt, and pepper. Add chicken and mix until well combined. Shape into burger patties.
- Heat oil in a large skillet over medium high heat. Add burgers and cook until golden brown on the bottom, about 5 minutes, then flip and cook another 5 minutes or until cooked through. The patties are cooked when they reach an internal temperature of 165ยฐF (insert a meat thermometer in the center of a patty to check).
- Carefully peel off large lettuce leaves. Rinse and dry. Serve patties on lettuce leaves topped with tomato slices, cucumber slices, and tzatziki sauce.
