Chia and Flaxseed Breakfast Recipes
Protein Strawberry Chia Pudding
Ingredients
- 2 tablespoons chia seeds
- 6 ounces silken tofu
- 2 teaspoons maple syrup
- 1 cup of strawberries
Directions
- Add tofu, maple syrup, and half the strawberries to a blender and blend until smooth.
- Mix chia seeds with the tofu strawberry mixture.
- Place in the fridge for at least 30 minutes to thicken.
- Top with remaining strawberries.
Blueberry Flaxseed Porridge
Ingredients
- 1/4 cup flaxseed
- 2/3 cup almond milk
- 2 tablespoons butter
- 1 pinch cinnamon
- 3 tablespoons blueberries
Directions
- Mix milk with flaxseed meal in a heat proof mug.
- Microwave for 90 seconds or boil in a small pan on the stove for 10 seconds. Overcooking makes it gummy.
- Stir in butter, cinnamon and top with blueberries.

Chia and Flaxseed Lunch Recipes
Veggie Pinwheels
Ingredients
- 2 tablespoons of light cream cheese
- 1 whole wheat tortilla
- 1/2 carrot peeled
- 1/2 cucumber peeled and sliced
- 1/4 cup spinach
- 1/2 tablespoon flaxseed
Directions
- Using a silicone spatula or a knife, spread the cream cheese over the wraps.
- Shred the carrots, chop the spinach and peel the cucumber into ribbons with a vegetable peeler.
- Divide up the cucumber into the wraps and then top with the carrot and spinach.
- Sprinkle flaxseed into each wrap.
- Tightly roll the wrap and use a sharp knife to cut into pinwheels.
- Serve with remaining ingredients or pack into a lunchbox. Each lunchbox contains 1 tortilla roll-up (cut into pinwheels), 1 cup celery sticks, 1 cup strawberries, and 1 cookie.
Easy Strawberry Chia Jam
Ingredients
- 3 cups of strawberries
- 3 tablespoons of chia seeds
- 3 tablespoons of water
- 6 drops stevia to taste
Directions
- If using frozen strawberries, let them thaw. I try to limit my use of the microwave so I just sat mine in a bowl out on the counter for an hour or so.
- Mash strawberries with a fork or blend them. I mashed one batch and used my immersion blender for another both methods worked great, but the blended version was more like jelly and less like jam.
- Mix in chia seeds, water and stevia, if using.
- Cover the mixture and place in the fridge to set up for a while, 30 60 minutes is ideal.
- Use on peanut butter (or sunbutter) sandwiches for lunch!
Chia and Flaxseed Dessert Recipes
Chocolate Peanut Butter Chia Pudding
Ingredients
- 5 tablespoons chia seeds
- 5 teaspoons cocoa powder
- 5 teaspoons maple syrup
- 1 7/8 cup coconut milk
- 3 1/2 tablespoons peanut butter
Directions
- Add chia seeds, cocoa powder, maple syrup, coconut milk, and 1/2 peanut butter to a jar, tightly cover, and shake vigorously to combine.
- Chill in the fridge for 1-2 hours until set.
- Drizzle with remaining peanut butter.
Raspberry Banana Yogurt
Ingredients
- 1 cup Greek yogurt
- 1/2 cup raspberries
- 1/2 banana sliced
- 1 tablespoon ground flaxseed
Directions
- Add raspberries, banana, and ground flax to yogurt to serve.
