Swap this easy oven fries recipe for the standard fried version and take your sodium and fat intake down a notch. Using olive oil will add extra flavor while giving you the benefits of a heart-healthy oil.
Ingredients
- 2 russet potatoes, peeled
- 2 Tbs olive oil
- 4 cloves garlic, chopped
- 2 Tablespoons parsley, chopped
- dash salt
- dash pepper
Directions
- Preheat oven to 450 degrees F.
- Wash and peel potatoes. Cut lengthwise into fries, about 1 centimeter wide.
- Put potatoes in a large ziploc bag. Add half the olive oil, salt, and pepper. Close the bag and shake well to coat.
- Arrange potatoes in an even layer on a lined baking sheet. Place into oven and bake for about 30 minutes, until lightly browned, turning potatoes every 10 minutes.
- In the meantime, chop garlic and parsley. Mix with remaining olive oil.
- Remove fries from oven. Toss with garlic mixture to coat and serve hot.
