Meat Based Family Dinner Recipes

Chicken Tacos (for Taco Tuesday, of course!)

Ingredients

  • 3 tablespoons olive oil
  • 9 ounces of grilled chicken strips
  • 3 red bell peppers, sliced
  • 3 teaspoons taco seasoning
  • 6 corn tortillas
  • 6 tablespoons guacamole

Directions

  1. Heat oil in a pan over medium heat. Add chicken strips and bell peppers and cook through, about 5 minutes.
  2. Sprinkle taco seasoning over chicken and stir completely.
  3. Scoop chicken and bell peppers into tortillas and top with guacamole.

Turkey Chili

Ingredients

  • 1 pound ground turkey
  • 3/4 cup onion, minced
  • 2 tablespoons butter
  • 3 cups water
  • 1/2 teaspoon garlic powder
  • 1 tablespoon chili powder
  • 1 tablespoon dried parsley
  • 1 teaspoon paprika
  • 2 teaspoons ground mustard
  • 1 1/2 cups kidney beans, drained and rinsed
  • 6 ounces tomato paste
  • 1/2 cup pearl barley
  • 1/2 cup shredded cheese

Directions

  1. In a large sauce pan, cook turkey and onions in butter until turkey is cooked through and no longer pink, about 9 minutes. Drain; return turkey and onions into pan
  2. Add remaining ingredients except cheese into pan; bring to boil, stirring frequently. Cover, reduce heat and simmer for 30 minutes, stirring occasionally.
  3. Uncover and simmer for 30 minutes, stirring occasionally.
  4. Serve over cooked macaroni.
  5. Sprinkle with shredded cheese or whatever topping you like!

Fish Family Dinner Recipes

Simple Fish and Chips

Ingredients

  • 4 cups of potatoes
  • 8 teaspoons olive oil
  • 4 dashes of salt
  • 1 pound of cod
  • 1 cup corn flakes
  • 4 eggs
  • 8 teaspoons water
  • 4 tablespoons flour
  • 8 cups green beans, trimmed

Directions

  1. Preheat oven to 425 degrees.
  2. Scrub potatoes until clean and then cut in 1/4 inch slices.
  3. Combine potatoes, oil, salt and pepper in a bowl. Stir so potatoes are covered in oil.
  4. Spray baking sheet with cooking spray and lay potatoes in single layer.
  5. Bake 30 minutes, flipping potatoes half way through.
  6. Cut each cod filet into 2 strips.
  7. Place cornflakes into a bag. Crush by rolling a glass over the bag.
  8. Beat egg and water together in a bowl.
  9. Spray another baking sheet with cooking spray. Put flour in a dish. Dip fish into flour, then egg mixture, then cornflakes. Place fish on a baking sheet and bake for 15 minutes, or until internal temperature is 145 degrees.
  10. While fish and potatoes are cooking, boil water and add green beans-boil for 3 minutes.
  11. Serve fish with potatoes and green beans on the side.

Curried Salmon Cakes

Ingredients

  • 1 1/2 pounds salmon, skinless
  • 4 1/2 teaspoons red curry paste
  • 1 1/2 teaspoon dried ginger
  • 3 teaspoons coconut aminos or soy sauce
  • 3/4 cup cilantro leaves chopped
  • 3 teaspoons avocado oil
  • 6 cups green lettuce, chopped
  • 3/4 lemon

Directions

  1. In a food processor, combine salmon, red curry paste, ginger and cilantro. Pulse a few times to form a paste.
  2. Shape mixtures into patties.
  3. Heat oil in a pan on medium high heat. Add patties and fry 4-5 minutes on each side until cooked and crispy.
  4. Serve with lemon and squeeze of lemon.

Vegetarian Family Dinner Recipes

Vegetarian Tortellini

Ingredients

  • 8 ounces tortellini
  • 4 roma tomatoes, chopped
  • 2 zucchinis, chopped
  • 1 garlic clove, minced
  • 2 pinches dried basil
  • 1 teaspoon oregano
  • 2 tablespoons parmesan cheese, shredded

Directions

  1. Cook tortellini as on package directions.
  2. Heat tomatoes, zucchini, garlic, basil, and oregano in a medium skillet for 5 minutes until zucchini is tender.
  3. Stir in tortellini, cooking 2-3 minutes.
  4. Serve and top with parmesan cheese.

Vegetarian Burrito Bowl

Ingredients

  • 1/2 cup brown rice
  • 1 cup water
  • 2 teaspoons olive oil
  • 2 orange bell peppers, sliced
  • 8 ounces firm tofu, crumbled
  • 4 teaspoons taco seasoning
  • 4 tablespoons guacamole
  • 1 cup lettuce, shredded

Directions

  1. Add rice and water into a saucepan and bring to a boil. Lower to simmer until rice is tender and has absorbed the water, about 20 minutes.
  2. Meanwhile, heat oil in a pan over medium heat. Add bell peppers and cook until tender.
  3. Add tofu and taco seasoning and stir to combine, about 2 minutes.
  4. Add rice to a bowl and top with tofu mixture, guacamole and lettuce.
