Ingredients:
- 2 cups cooked brown rice
- 2 Tbsp olive oil
- 1 cup kimchi
- 2 carrots, diced
- 3 eggs
- 1 green onion, chopped
Instructions:
- Chop kimchi and set aside 4 Tbsp of kimchi juice.
- Heat oil in a medium frying pan and cook rice for 5-10 minutes.
- Add in kimchi, kimchi juice, and carrots, and cook for another 5 minutes or until the rice does not appear wet.
- Portion out the rice into bowls. Crack the eggs into the frying pan and cook sunny side up. Place eggs on top of the fried rice bowls and garnish with green onions.
