Meet Nikki, your registered dietitian nutritionist.

Erika “Nikki” Simmons MS, RDN

Erika, who also goes by Nikki, grew up in Southern California and has been an Arizona resident since 2020. She graduated from California Polytechnic State University, San Luis Obispo with her B.S. in Nutrition. Nikki completed both her M.S. in Nutrition & Metabolism and Dietetic Internship at The University of Texas Medical Branch in Galveston. Nikki believes in an “all foods fit” approach to nutrition, and enjoys working with patients to find food freedom in their lives.

Nikki’s ideal client:

Nikki enjoys working with individuals who have the motivation to improve their overall health and wellness. She educates using realistic approaches, including a non-diet approach, to help clients achieve their health goals and prevent or treat disease. Her ideal client is willing to embrace a non-diet lifestyle and is open to practicing a mindful/intuitive eating approach towards nutrition.

Why is Nikki a registered dietitian nutritionist?

Nikki chose to go into the field of nutrition and dietetics because it combined her interests of working with people and learning about the science of food and how it impacts our lives. She started her educational career in Psychology and began to understand how better to work with people. Through continuing her education, she became a Registered Dietitian Nutritionist. Becoming a Registered Dietitian Nutritionist meant that she could continue to learn how best to work with people and find their motivations for achieving healthier lives along with the ability to provide education and information toward their goal.

I chose to become a Registered Dietitian because I know navigating the world of nutrition and health can be difficult; I strive to help make that learning opportunity a little bit easier for any and every person I work with.

How does Nikki stay healthy?

Nikki stays healthy by honoring her body’s cravings through intuitive eating and incorporating mindful and enjoyable movement. She enjoys swimming, taking her dog Kona for walks and group fitness classes like kickboxing and HIIT. Nikki believes that health incorporates not only physical wellness, but mental wellness as well. 

What else should you know about Nikki?

When Nikki is not working, she enjoys reading, baking, or spending time with her friends and family. She has one dog named Kona who loves playing fetch with a tennis ball and could play all day. Nikki re-reads the Harry Potter books every summer, and you can often find her in a Trader Joe’s!
