Turkey Enchilada Skillet

We love a quick and easy dinner recipe that can be whipped up fast and tastes delicious. These lightened up enchiladas feature ground turkey rather than beef to cut calories, cholesterol, and saturated fat. Ground chicken would work too. Bottled enchilada sauce adds to the flavor, while the spinach adds some extra veggies. Serve these with a side of steamed broccoli or any other vegetable you love. Ole!

For the enchilada sauce, we recommend Siete brand. Also if you want to try something new, swap out the corn tortillas for Siete almond flour tortillas.

Ingredients:

  • 1 pound of ground turkey
  • 10 oz enchilada sauce
  • 1/4 cup water
  • 1/2 teaspoon oregano
  • 2 cloves of minced garlic
  • 8 corn tortillas cut into strips
  • 1 cup of grated cheddar cheese
  • 4 cups of spinach, shredded

Instructions:

  1. Brown the turkey in a plan until cooked through. Remove from pan and set aside.
  2. Add enchilada sauce, water, oregano, and garlic to a pan over medium heat. Simmer for a few minutes to let the sauce thicken.
  3. Add tortillas, ground turkey, spinach to the pan and cook until heated through, stirring occasionally.
  4. Sprinkle with cheese. Cover the pan and cook until cheese has melted. Serve immediately.
