Chocolate Energy Bars With Peanut Butter

    • 1 cup peanut butter
    • 1&1/2 cups pitted dried dates, preferably Medjool
    • 1 cup dark chocolate, divided


1. Grease a 8×8 square cake pan.
2. Roughly chop chocolate.
1. Combine peanut butter and dates in a food processor and blend until well combined.
2. Add half the chocolate and pulse a couple times until chocolate chunks are mixed in.
3. Spread into prepared pan.
4. Melt remaining chocolate in the microwave in 15 second increments, stirring in between.
5. Spread melted chocolate over bars and refrigerate until chocolate is set (about an hour). Enjoy!
