Sweet Potato Bread

    • 3/4 pound sweet potato
    • 1/2 cup coconut flour
    • 3 eggs
    • 3 tablespoons coconut milk
    • 1 teaspoon baking soda
    • 2 tablespoons lemon juice
    • pinch of salt


1. Preheat oven to 400 degrees and grease a small loaf pan or muffin tin.
2. Boil water for sweet potato.
3. Cut sweet potato into 1 inch cubes.
1. Boil sweet potatoes for 10 minutes, until soft. Once soft, gently mash the sweet potato. (you should have a heaping cup of mashed sweet potato).
2. Using and electric mixer or food processor or blender mix all ingredients until well combined.
3. Pour into the prepared tin, smooth the top.
4. Bake for 25 minutes. Cover the loaf with foil and bake for a further 10 minutes. Remove from the oven and allow to cool before slicing.
